Simple Holiday Cocktail: Gautier Apple Sidecar

Gautier Apple Sidecar Cocktail
1 3/4 oz. Gautier VS Cognac
3/4 oz. Apple Syrup (recipe below)
1/4 oz. lemon juice
2 oz. Apple Cognac Mousse (recipe below)
3 dashes grated cinnamon
Add cognac, Apple Syrup and lemon juice into a shaker. Shake vigorously and strain into a coup glass. Top with Apple Cognac Mousse and a sprinkle of cinnamon.
Apple Syrup Recipe
8 fluid oz. apple cider
8 oz. sugar
Bring cider to boil, then stir in sugar.
Apple Cognac Mousse Recipe
4 oz. Gautier VS Cognac
4 oz. Apple Syrup
1 oz. lemon juice
4 egg whites
2 CO2 cartridges
Add all the ingredients (aside from cartridges) into a whipped cream dispenser and shake vigorously for 15 seconds. Then, charge the cannister with CO2 cartridges, shaking between each charge. Use to top the cocktail.
